Tia Rosa's Tostadas Estilo Caseras



I found some amazing tostada shells last night at WalMart, which make great tortilla chips when you break them up.  They are great for controlling your portion size (once I open a bag of tortilla chips, they usually are all eaten in 1 or 2 sittings.)  If I use tostada shells, I can bring 4 shells to work in my lunch, break them up into tortilla chip size, and be happy.

The best part of all is that they are only 15mg of Sodium per shell!  They are the Tostadas Estilo Caseras (or Homestyle Tostadas Caseras), by Tia Rosa.

Recipe: Chili's Copycat Salsa Recipe (Andy's low sodium version)



Ingredients:

  • 2 cans Tomatoes, Diced -- No Salt Added  (14.5 oz size)
  • 2 med Serrano Chilis, or 4-5 Jalapeno Chilis, seeded and ribs removed (or less if you don't like a lot of heat)
  • 1/4 C Onion, Yellow, cut into quarters
  • 1 tsp Garlic Powder
  • 1 tsp Cumin
  • 1/2 tsp Sugar
  • 1 tsp Lime Juice

Recipe: Stepf's Veggie-licious Guacamole


Minutes to Prepare: 5
Minutes to Cook: 1
Number of Servings: 8

Ingredients:
  • 2 Avocados, peeled
  • 1 Lemon, juiced
  • 2 T Cilantro, Fresh, chopped  (leave out if you don't like cilantro)
  • 1 small Tomato (plum or roma)
  • 1 Jalapeno, chopped, seeds and white ribs removed (that's where most of the heat is)
  • 1/2 cup Green Pepper, chopped
  • 1 small White Onion, chopped
  • (Salt to taste)
  • Black Pepper to taste

Recipe: Tortilla Chips (Low Sodium)



If store-bought tortilla chips are too salty for you, try making these.

Ingredients:
  • 4 medium White Corn Tortillas 
  • 1/2 tsp Brown Sugar, unpacked
  • 1/4 tsp Cumin, Ground
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Onion Powder
  • 1/4 tsp Paprika
  • 1/8 tsp Cayenne Pepper
