Recipe: Chicken Tacos

Ingredients:
  • 1 Tbsp Oil
  • 1 lb Boneless, Skinless Chicken, cut into strips
  • 1/2 cup Ketchup
  • 1 Tbsp Vinegar
  • 1 med Jalapeño, seeded & minced
  • 1/4 tsp Garlic Powder
  • 1/4 tsp Ground Cumin
  • 6 ea Taco Shells

Directions:
  1. Cook chicken in oil in frying pan until cooked on all sides.
  2. Mix ketchup, vinegar, jalapeño , garlic powder & cumin together. Pour over chicken.
  3. Bring to a boil and then simmer for 20 mins, covered.
  4. Spoon into taco shells, and top with desired toppings.
Toppings:
  • Avocado, peeled and cut into wedges
  • Lettuce, shredded
  • Cheese, grated
  • Sour Cream
Servings: 6
